I hope you are hanging in there during the new normal we are living. Mitch and I have been trying to get creative in the kitchen to get us through social distancing.

Not only do we enjoy cooking together, this has given us a chance to try new things and recipes so we can grow together in our cooking skills. With our lifestyle we are forced to eat out A LOT, so it has been refreshing to really get into cooking together and try new things.

I have to give Mitch credit for this idea, but little did he know I was going to take it and run with it.

A couple weeks ago, while Mitch was taking a nap I decided that I wanted to do something different because we were both kind of down because of this quarantine. So I decided that I wanted to recreate one of our favorite dates: going to a Mexican restaurant. I made a little invite and sent it to him so when he woke up he was invited to my Mexican night.

When he woke up, he immediately loved the idea and made the suggestion that we should do themed country nights for dinner since we are home for dinner every night. I immediately loved it, and here we are now.

We decided we would take the list of countries we want to visit together and make a traditional meal and cocktail from that country to feel like we are traveling there. I blast music from that country while we cook, and we have so much fun trying new things together. This has quickly turned into our favorite night of the week, when we get to “travel” somewhere new for dinner.

This has been such a fun idea and we have brainstormed so many things that we are excited to cook! I thought maybe some of y’all would like this idea as well and want to eat around the world during this quarantine.

The countries that we are traveling to for dinner are listed below including what we plan to cook. I would love your ideas on other countries we should travel to for dinner! If you decide to play along be sure to tag @BasicallyB in all of your photos!

I have been able to use Pinterest to find most of these recipes!

Mexico

Spicy Margaritas – will definitely be adding this to our cocktail rotation! I will share the recipe soon.

Chips & queso

Fish tacos

England

Fish and Chips – Mitch and I went fishing the day before England day, so it was a great way to use the fish we caught. Talk about fresh! We used a beer batter that I found online, however we prefer how we normally make our fried fish – the southern way. Nothing against the Brits! For the chips we just used frozen fries, threw them in the fryer with the fish and seasoned by ourselves.

Crispin English Hard Cider – We found this at the grocery store, and actually liked it way more than normal hard cider that is sometimes so sweet!

Italy

Italy has some of the best food in the world, and I can’t wait until I can experience Italy again, but this time with Mitch by my side!

Homemade Pasta– I took a cooking class in Florence, so hoping that would help me .We attempted to make pasta from scratch and it was actually delicious! It was so fun and definitely a memory we will carry with us. We used this ricotta gnocchi recipe!

Meatballs– Now I am not allowed to share this recipe because it is a secret family recipe that has been in my family for generations. I have known how to cook these meatballs since I was 5, and Mitch loves them!

Red Italian wine– of course! I may fancy myself a glass of Prosecco or two while we try to make the pasta.

Greece

Another foodie destination that I loved traveling too! It is so fun to recreate meals that I have eaten in the actual country of origin.

Hummus – we are going to attempt to make it from scratch.

Pita Bread

Chicken Kabobs

Rice Pilaf

Thailand

Pot stickers – they don’t seem as hard to make as you may think- stay tuned to see how they turn out!

Pad Thai – this is our favorite Thai dish so it will be fun to recreate it at home!

Argentina

Argentina has been towards the top of my travel bucket list for some time now. Hopefully recreating this cuisine will only make me want to go there even more!

Empanadas – My absolute favorite!!

Carne asada with chimichurri sauce

Japan

Ramen – none of that instant stuff that you ate in college. We want to cook the traditional!
