Calling all avocado lovers — I have the perfect recipe for you!
Ok to be honest, who doesn’t love avocados? Yes, they may be basic, but they are so yummy I cannot get enough of them. I wanted to share with y’all one of my favorite ways to prepare avocados –chicken stuffed avocados. Mitch and I have these at least every other week for dinner.
So my mother and I discovered this recipe when we were at a restaurant in Memphis, Tennessee a few years ago. Except their’s was so much better because it was a crab stuffed avocado. As soon as we saw it on the menu, we were practically drooling. Let me tell you, it was that good. Literally heaven in a bite. So we decided we had to take it back home with us. Being raised in Chicago, finding fresh seafood is scarce, so we decided to substitute crab with chicken, however you can most definitely do crab, and let me tell you it is so yummy.
What you will need:
2 ripe avocados
2 chicken breasts (chopped and cooked)
1/4 cup cream cheese softened
2 Tablespoon mayonnaise
A dash of hot sauce
Salt and pepper to taste
First you are going to start by preparing your chicken. Mitch and I like to use a rotisserie chicken because it is already cooked, and all we have to do is chop it up. That is usually Mitch’s job, while I prepare the avocados and the rest of the stuffing. However, you can most definitely use raw chicken, and chop it up and cook it as well. We just like taking the easy route!
While Mitch is working on the chicken, I start the avocados. It is real simple. All you do is cut them, take the pit out, and spoon out a little bit of each avocado so there’s room for the stuffing. Put the spooned avocado into a mixing bowl. However, you still want to make sure there is enough avocado left so you have a good shell.
Once the avocados are all spooned out, put them aside because it is time to make the stuffing. In the mixing bowl already you will have your avocado. Then you will simply add the cream cheese, mayo, salt, and pepper and mix. To add a little spice we add a dash of hot sauce, but add it to your taste preference. Once all the ingredients are mixed together you then add the chicken. This is Mitch’s favorite part to start eating some of the stuffing, I have to keep him away!
Once you are all mixed up, you are then going to spoon a hefty amount into each avocado. Do not be afraid to really get in there and fill them. This stuff is that good. Once your little avocados are all full of joy and goodness, you place them on a cookie sheet and bake at 350° for 8 minutes. Since the chicken is already cooked, you are just warming everything up and adding a slight crisp.
Once the timer goes off, get those avocados out of the oven and onto a plate and into your mouth. These avocados are creamy, full of taste, and just such a yummy dish.
