12 Avocado Recipes That Aren’t Toast or Guac

Friday is National Avocado Day! I love myself a good avocado. Not only are they extremely healthy for you, but they are so versatile.

I used to think avocados were only for toast or guacamole, but I have recently been incorporating them more and more in unique ways in my cooking.

I pulled together 12 avocado recipes that aren’t toast or guac.

Ever tried making taco stuffed avocados? Using it to up-level your mac-and-cheese? Turning it into a creamy chocolate pudding? Soon, you’ll be able to say, check, check, and check.

Chicken Stuffed Avocado

A personal favorite way to prepare an avocado is chicken stuffed avocado. Mitch and I make this pretty much every other week. They are so easy, and so yummy. I have a whole blog post about Chicken Stuffed Avocados here!

Broiled Parmesan Avocado

Since the most popular way to eat avocado is to dig right in, you might not know that the healthy fat actually tastes delicious cooked. For a savory breakfast or healthy snack, switch things up and broil your avocado in the oven. Top it with cheese and a little lime juice, it’s perfection.

Thyme Chicken and Roasted Red Pepper Hummus Avocado

This recipe combines avocado with another tried-and-true healthy food fave: hummus. But don’t be fooled; this is not your average hummus. Thyme-seasoned chicken, shiitake mushrooms, and onion make these stuffed avocados a perfect meal.

Creamy Avocado Pasta

This is something I have never seen, but am all about it! The avocado makes for an incredibly creamy mild base, while a generous amount of garlic and basil work together to give the sauce a punch of flavor similar to pesto, but without any cheese or nuts.

Garlic Avocado Grilled Cheese

Who doesn’t love grilled cheese? Add some avocado and garlic, and it takes it up to a whole new level! This is kind of similar to avocado toast, but it looked too yummy to not include!

My first time having avocado fries was in Savannah, GA and I was hooked immediately. I can’t wait to try to make them at home! The creaminess of the avocado combined with a crunchy breadcrumb coating creates a perfect balance. Enjoy them as is or dipped in aioli sauce.

Avocado Mac & Cheese

I don’t really think of avocado when I think of Mac & Cheese. It kind of intrigues me. This recipe is perfect for when you want that cheesy taste with a light finish that doesn’t leave you feeling weighed down.How does adding avocado lighten up an otherwise heavy-feeling comfort food? For starters, there’s no milk in this creamy avocado mac and cheese recipe. 

Taco Filled Avocado

Take your taco Tuesday up a level with these taco stuffed avocados. Trading out a flour or corn tortilla for a heart healthy avocado is a total game changer. The chipotle cream in this recipe sounds so good I can’t wait to try it!

Avocado Chocolate Pudding

I am a sucker for pudding, and this one looks too tasty! Only taking 10 minutes to make by throwing the ingredients in your blender, this would make the perfect nighttime snack when you are craving something sweet!

Flourless Avocado Brownies

These brownies are super fudge-y and moist—and they’re 100 percent gluten-free. The secret to their rich taste and texture is adding coconut oil and almond butter to the avocado batter. I have never had a flourless brownie, but I’m here for it!

No-Bake Avocado Cheesecake

One of my favorite desserts is cheesecake, so when I stumbled upon this avocado cheesecake I knew I needed to include it! This easy no-bake dessert relies on the smooth, creamy texture of avocado to form a stiff, custardy base. The lime zest and juice add the perfect little tang.

Fudgy Avocado Pops

This simple recipe would be the perfect summer treat! Chocolatey and creamy makes the perfect combination!
